Potato Lollipop

                           Helloo...... I am here with a recipe which is just loved by your Kids. This is a special one which is totally dedicated to your Kids. It is simple, easy and fast making recipe.In this recipe I have used only one Green Chili because as I have said that this recipe is totally dedicated to Kids. If you want you can increase the amount of the spiciness too...It is made up of Potatoes and can be easily cooked. So. let us get in to the process.....

Ingredients:

  • Medium sized Potatoes - 2
  • Ginger - 1 inch piece
  • Cumin Seeds - 1 tsp
  • Green Chili - 1
  • Onions - 2 finely chopped
  • Curry Leaves - 1 tsp finely chopped
  • Coriander Leaves - 1 tsp finely chopped
  • Coriander Powder - 1 tsp
  • Garam Masala Powder - 1 tsp
  • Salt - to taste
  • Oil - for deep frying
  • Bread Crumbs - 1/2 cup
  • Corn Flour - 2 tsp
  • Water - little amount
  • Tooth Picks - 15
Process:

STEP 1:

              Take 2 medium sized Potatoes steam them that is boil them and then peel them off later mash by placing in a large bowl. To this we should add Masala. For the purpose of this I am going to prepare simple, easy and fresh Masala. Take a blender or a mixer, add a inch of Ginger and a Green Chili and blend them in to paste and there is no need of adding Water. Finally add Cumin Seeds and blend once more and then add to the mashed Potatoes.

STEP 2:

             As these are mostly loved by Kids, I am reducing the amount of spiciness by adding little amount of Ginger and just a Chili. If your Kids likes more spiciness then you can add more number of Chili's.

STEP 3:

               To this, add finely chopped Onions, and also finely chopped Curry Leaves and Coriander to this and along with them also add the spices such as Coriander Powder, Garam Masala Powder and Salt to taste and mix all of them nicely. And also make sure that this Potato mixture does not contain much moisture because if it contains more moisture we can not make dumplings properly.

STEP 4:

                 Now we should make Slurry. For that take a small bowl. To this add Corn Flour and make a Slurry nothing but fine paste by adding 3 tsps of Water. Now we should coat the Bread Crumbs to the dumplings by means of this Slurry. Here Slurry means nothing but a Batter.

STEP 5:

                 As we have the Potato dumplings, Bread Crumbs and the Corn Flour Batter (Slurry) Our Lollipop's are almost done by doing a single step that is nothing but deep fry.

STEP 6:

                  Place a deep frying pan and pour the Oil in to it and let it heat up and mean while we will make our Dumplings ready to deep fry. As we have the Dumplings take them one by one and dip them in the Batter of Corn Flour and please be sure that you should not dip these Dumplings for more time because if you place them for more time because if you place them for more time in the Batter it may lead to absorption of more Oil during the deep fry.

STEP 6:

              And then after dipping in to the Batter roll them in the Bread Crumbs and follow the same procedure for all the entire Dumplings and then place them in the hot Oil and fry them until they turns in to golden brown color. After place them in the paper towel so that excess Oil can be absorbed.

STEP 7:

             Finally, pierce the tooth picks in to the fried Dumplings and serve them with Tomato Ketchup.
                      I am sure that your Kids will really enjoy these Lollipop's.

Banana Cookies (Biscuits)

                              Hi everyone... Today I want to share a recipe only for Kids..Now I am going to show very simple Cookies  which can be made at home by less number of ingredients and which is done very quickly in less time. These Cookies will be simply loved by your Kids and you too. These Cookies are made of Bananas and hence called as Banana Cookies. These Cookies either we can bake them or deep fry too. But I am showing the process of deep fry method you can use oven too..

Ingredients:


  • Bananas - 2
  • Egg - 1
  • Vanilla essence - little bit approx 1/2 teaspoon  
  • Butter - 1 tablespoon
  • Semolina (Sooji) - 1 small cup
  • All purpose or Maida flour - 2 cups
  • Powdered Sugar - 1 cup
  • Almonds - 5
  • Cashews - 10
  • Oil - for deep fry
Method Of Preparation:

STEP 1:

                The first step that should be done by us is, as we have taken the dry fruits which are Almonds and Cashews, we should chop them finely or else cut in to small pieces and keep aside. And one more thing is we can use either powdered Sugar or else our regular Sugar but powdered one is mostly preferable.

STEP 2:

               Take a large mixing bowl, and then take 2 Bananas and just peel them off and then add to the bowl and mash them very nicely. It is not mandatory to take 2 Bananas, you can cut it down and can take 1 Banana. To this mashed Banana add 1 Egg and little bit of Vanilla essence and Butter and then mix them nicely. For 2 Bananas 1 Egg is required.

STEP 3:

              After mixing the Bananas, Egg, Butter and Vanilla essence nicely it is the rime to add the dry ingredients. Add 1 small cup of Semolina that is Sooji, 2 cups of all purpose Flour that is 1 big cup of Flour and also add a cup of Powdered Sugar. Here the amount of Sugar that should be added depending upon how much sweetness you want. Normally 1 cup of Powdered Sugar is sufficient to make these Cookies.

STEP 4:

             To this add finely chopped dry fruits which we have kept aside at starting of our preparation process. Now mix this nicely by means of hand and we are going to make a nice dough out of it and then we will roll it and make our Cookies.

STEP 5:

                  The dough will be soft and you need not rest this dough and just we can make it directly. Dust some Flour then we can roll the dough. Roll it till it is half inch thickness and we can cut it in to our desired shapes by means of cutter. There will be many shapes of cutters like Star, Circle, Triangle etc..; 

STEP 6:

              In order to grab the Kids attention cut them in a special shape like Star and they will look really amazing. While cutting, you just dip this cutter in to Flour and then cut so that your dough won't stick. Repeat the same process for the remaining dough and then we can deep fry them.

STEP 7:

              Place a deep pan and pour Oil and make it hot. When it is hot enough, drop all those Cookies in to the Oil one by one and we should fry them till they are slightly golden color. These Cookies should be cooked in a very very slow flame so that inside also gets cooked. And don't cook them too much.

                           Remove them to a plate and once they are cool down then you can have these Cookies then only you can have the real taste of it that is little bit softness and little bit crunchiness from these Cookies.

                     


         
            

Sooji (Ravva) Laddu

                           Helloo... Now I am going to introduce a Sweet which is made up of Sooji nothing but Semolina and we all well known this Sweet as Ravva Laddu... Have you ever tried this Ravva Laddu? Try this it is really tasty and crunchy too.. I am making this Laddu's by not powdering the Semolina or Sugar so that it will be really crunchy and yummy.. If you want to make them as powder you can make it but Try them as I have guided it will be really delicious..  

Ingredients:


  • Sooji - 1 cup
  • Sugar - 1 cup
  • Grated Coconut - 1/2 cup
  • Milk - 1/2 cup
  • Cardamom (Elachi) Powder - pinch 
  • Ghee - 3 teaspoons
  • Cashews - 10
Preparation Process:

STEP 1:

                Take a frying pan and place it on stove and switch on the stove and then add a teaspoon of Ghee and when it is hot enough add crumbled Cashews and fry them until they turn to golden brown color. When they turned in to the desired color take them in to a bowl.

STEP 2:

              To the same pan add 2 more teaspoons of Ghee, to this add 1 cup of Sooji which is referred as Ravva in the local language and fry it in a slow slow flame and we are going to dry roast this  if you want little bit color you can dry roast it until you get light brown color and it is not mandatory so that you can dry roast it so that the raw flavor is gone.

STEP 3:

                 We can identify that our Sooji should be free flowing till then we should roast it in the Ghee and make sure that the fame must be very very low flame. To this add grated Coconut and fry it for 2 more minutes in the same way till the raw flavor of Coconut goes away.Finally add a cup of Sugar in the same pan let it be on the slow flame for one more minute and then take the mixture of Sooji, Coconut and Sugar and put it in a large bowl so that we can make the Laddu's freely.

STEP 4:

               In order to make Laddu's we should need a proper binding or else they may break easily. For the purpose of the binding we are adding little amount of Milk. The Milk that we are going to use are the boiled one and they need not to be hot they must be cool. The quantity of Milk that should be added is not exact, add them so that it is enough for binding and don't add too much.

STEP 5:

               Before going to make the Laddu's add the roasted Cashews and Cardamon Powder and then make Laddu's. Here I have added that Cardamon (Elachi) Powder as it is a Sweet and everyone usually add this in Sweets. If you don't like this Elachi flavor you can skip it and finally our excellent tasty and crunchy  Sooji or Semolina  (Ravva) Ladddu's are ready to eat.. If you need you can garnish them with Cashews again.

Capsicum Potato Masala Curry

                                                  Hii everyone... Here is the tasty Curry which is made of simple and ready made Spices and hence it takes very less time to cook this curry and you can really enjoy the taste of the Bell Pepper along with our favorite Potato and Tomato... So, let us get in to the process..

Ingredients:


  • Capsicums (Bell Pepper)  - 2 which are diced
  • Potatoes - 3 which are cubed
  • Tomatoes - 2 of finely chopped 
  • Onion - 1 of finely chopped
  • Cumin Seeds - 1/4 teaspoon
  • Coriander Powder - 1 1/2 teaspoon
  • Garam Masala Powder - 1 teaspoon
  • Amchur (Dried Mango Powder) - 1 teaspoon
  • Salt - to taste
  • Chili Powder - to taste
  • Turmeric - 1/4 teaspoon
  • Oil - 2 teaspoons
  • Roasted Jeera (Cumin Seeds) Powder - 1 teaspoon
  • Coriander leaves - 2 spoons of finely chopped





Method Of Preparation:


STEP 1:

                   First we should take 3 Potatoes and these must be cubed and place in the bowl of Water. Because as we all know if the Potatoes left in the free air without placing them in the Water they gets Oxidized and hence place them in a bowl which is filled with Water. And also Finely chop the Tomatoes and also dice the Capsicums.

STEP 2:

             Take a nice deep cooking pan. To this, add Oil and when the Oil is hot enough, add Cumin Seeds and when they starts crackling add finely chopped Onions and also little bit of Salt so that the moisture in them gets extracted and Onions will fry in the less time. Fry the Onions for about 2 minutes so that they will be transparent.

STEP 3:

                  When the Onions are of our desired form, add finely chopped Tomatoes and  be sure that
 you should cook Onions along with Tomatoes for about 2 to 3 minutes by mixing it continuously. 

STEP 4:

               To this, for seasoning add about half teaspoon of Red Chili Powder, Coriander Powder, Cumin Seeds (Jeera) Powder, Amchur (Dried Mango Powder) and here you can substitute this Mango Powder by squeezing lemon at last and also add Turmeric and little bit of Salt to taste. While adding Salt be careful because, while frying Onions we have added some Salt so add little bit which is enough to your taste.

STEP 5:

                 After adding all those Spices mix them well and cook it for 2 minutes so that the Masala will be cooked and then we can add our Potatoes to it. After few seconds add the cubed Potatoes and mix it well so that Masala will be coated to the diced Potatoes. And the add some Water and cook it by covering it by a lid for 3 minutes and check whether the potatoes are cooked or not.

STEP 6:

             After this add our diced Bell Pepper and now add some more Water and cover it for 2 minutes and then after open it and cook for few seconds and our Curry is done by adding freshly chopped Coriander to it.

           We can serve this curry with Chapati, polka and Rice. It can be served as a Gravy Curry or also in the dry manner. If you like Gravy curries you can add more amount of water and then you can serve it in your meal.

Capsicum Masala Curry

                      Namasthe... Now I would like to share a very simple and tasty recipe with Bell Pepper. In India we usually called as Capsicum and this vegetable have a very unique taste and here with very less number of ingredients i am going to show you a very tasty and perfect curry for Chapati , Polka and Rice too.. So, let us get in to the process... 

Ingredients:

  • Bell Pepper (Capsicums) - chopped in to medium size of 1 large cup
  • Cumin Seeds - 1/4 spoon
  • Mustard Seeds - 1/4 spoon
  • Curry leaves - 2 leaflets
  • Onion - 1 finely chopped
  • Salt - to taste
  • Chili Powder - to taste
  • Turmeric - 1/4 spoon
  • Ginger Garlic Paste - 1/2 spoon
  • Coriander Powder - 1/2 spoon
  • Coconut powder - 1 spoon
  • Oil - 1 spoon
  • Coriander leaves - 2 spoons of finely chopped
Method Of Preparation:

STEP 1:

                   Take a pan and place it on the stove by switching it on. Add 1 spoon of Oil and this little  amount of Oil is sufficient to make this Curry. Add Mustard Seeds and Cumin Seeds and mix them and then add one leaflet of Curry leaves and when they crackle add chopped Onion and then add little bit of Salt and this addition of Salt brings out the moisture from the Onions and helps in cooking faster. 

STEP 2:

             To this, add a pinch of Turmeric and then add a half spoon of crushed Ginger Garlic. And when the Onions are slightly gets transparent add chopped bell Pepper, in common known as Capsicum to it and mix it well.

STEP 3:

                 Capsicum or Bell Pepper is a very delicate vegetable and there is no need to cover it by a lid. If you cover it, there may be a chance of getting mashed so don't cover and cook it by mixing in middle and will cook in few minutes.

STEP 4:

                 In just 4 or 5 minutes you can observe that your Capsicum will be  half don. Before this,  add Coriander Powder, Coconut Powder and also add little bit of Salt to taste. Be careful while adding the Salt because while frying the Onions we have added little amount and here you can add very little as required to your taste.

STEP 5:

               Along with the Salt you also add little amount of Chili Powder to your taste approximately you can add half spoon and then mix all these. Generally, capsicum have a very unique taste and when you add them with the vegetables like Green Peas, Potato, cauli flower the taste further increases.

STEP 6:

                  After 10 minutes of slow flame cooking Capsicum looks really nice and tempting and all the Masalas will be coated to the Capsicum and  your dish will be almost ready. When it is almost ready, add finely chopped Coriander to it and switch off the flame.

                            This Curry goes excellent with Chapati, Polka and even Rice.....

Palak Pakoda

                             Today, I want to introduce a snack item made of Palak that is Palak Pakoda. This is very very easy to make and also tasty too. They will be perfect for evenings and loved by the Kids a lot. It is a simple Snack which requires very less number of ingredients and also less process too...   

Ingredients:


  • Spinach leaves - 1 large cup
  • Gram Flour - 1 cup
  • Rice Flour - 1/2 cup
  • Hing - pinch
  • Salt - to taste
  • Turmeric - 1/4 spoon
  • Tymol Seeds (Ajwain) - 1/4 spoon
  • Crushed Coriander Seeds - 1/4 spoon
  • Water
  • Oil - for deep fry
Preparation Process:

STEP 1:

                       For making this Pakoda, First we should prepare the batter. So that take a large bowl and add a cup of Gram Flour. The Gram Flour that we have taken must be nice, fine and pretty good. For one cup of Gram Flour, we need half cup of Rice Flour so that add this Rice Flour to the gram Flour.

STEP 2:

                 To the same bowl add a pinch of Hing and it gives a very nice flavor to your pakoda and also add Salt to taste. Basically, you all know that Spinach is got lot of Salt in it so, while adding the salt you please be careful and add up to your taste but little lesser than usual.

STEP 3:

              To this, add Turmeric, Ajwain nothing but Vaamu which is usually referred in our local language. And also add crushed Coriander Seeds. This Coriander Seeds are optional and it can also be avoided if you are not interested in that taste but by adding those crushed Coriander Seeds it adds an additional flavor to our Pakoda.

STEP 4:

                    Now, mix all of these ingredients nicely so that by adding Water we are going to make in to a nice Batter. But, before going to add Water to it add some Oil and one teaspoon should be good enough and then add Water and make in to a thick paste.

STEP 5:

                 Here I am suggesting you to make a thick Paste instead of making a Batter because, I think you all know this simple trick that when you make a thick paste then all the lumps will be gone and then you can add little bit of extra Water and make in to a nice Batter.

STEP 6:

                Take Spinach leaves. And no need to cut them in to small pieces we can use them as their original size. It is also your choice if you want to crush them in to small pieces you can do it and it is up to you. Now add that Batter to these leaves and mix it well so that all those leaves will be nicely coated with the Batter.

STEP 7:

                 Now we can fry them. Place a deep frying pan and add Oil to deep fry and when it is hot enough, drop these leaves in to the hot Oil and fry them to nice and crispy. Once they are fried to crispy take them from the Oil and place in paper towel so that excess Oil can be absorbed.

                 Finally, While serving you can serve by squeezing the lemon on this Pakoda and so that...Hot, yummy and crispy Palak Pakoda is ready to serve and there is no need of any Chutney to this we can have them directly... Enjoy the recipe...

Bread Potato Rolls

                              Today I would like to introduce the snack item which is made by Bread and some spicy Potato filling. The snack is named as Bread Potato Rolls. It is the perfect snack for afternoon Tea and can also be served as an appetizer. These Rolls are Crunchy from outside and Spicy as well as Soft inside. This snack is very easy to prepare and there is no much long process involved in it and it is also liked by everyone. Let us begin the process by knowing the ingredients that are required to make these Rolls..      

Ingredients:

  • Bread Slices - 4
  • Medium size Potatoes - 2
  • Mutter (Green Peas) - 1/4 cup
  • Green Chili - 1 finely chopped
  • Coriander leaves - 1 spoon of finely chopped
  • Oil - for deep fry
  • Cumin Seeds - 1/4 spoon
  • Amchur (Dry Mango Powder) - 1/2 spoon
  • Red Chili Powder - 1/4 spoon
  • Salt - to taste
Preparation Process:

STEP 1:

                    First, trim the edges of Bread Slices and cut each piece in to two Slices by cutting them in to half. And don't feel that these edges are of waste, I usually make Bread Crumbs by those edges. Now it is the time to make filling. 

STEP 2:

                 Place a Pan on stove and heat is on in medium flame, add one spoon of Oil and when it is hot enough, add Cumin Seeds (Jeera) and as the Cumin Seeds cracks, add  Green Peas , finely chopped Green Chili's and finely chopped Ginger and fry them for few seconds.

STEP 3:

                  To this we should add boiled and mashed Potatoes. For this, take two medium sized potatoes and they should be peeled, boiled and also to be mashed and it should made about 1/4 cup of mashed Potatoes. This should be added to the pan and along with this add Mango Powder , Red Chili Powder , Salt to taste, finely chopped Coriander and mix it well and just stir fry about a minute and don't fry this too much and let some moisture be present in this filling.

STEP 4:

                  To make this filling you just add one spoon of Oil and it will be sufficient. if you add more amount of Oil, while we are deep frying the Rolls more amount of Oil gets absorbed So, add little amount of Oil for making this Stuffing.

STEP 5:

                After frying the Curry for 1 minute it is almost ready and you can switch off the flame. Before doing this, check the spiciness of this Stuffing, if you like more spice this is the time to add and mix it well and then finally switch off the flame and let it be cooled.

STEP 6:

               After then, take small amount of Stuffing and make in to the oval shape and do the same for all the remaining. At starting as we have kept the Bread Slices readily by trimming the edges now take them and take some Water, dip one side of Bread Slice in to the Water and squeeze the Water by placing the Bread Slice in between your Palms and then take one roll of stuffing and place it in the Bread piece and cover that roll from outside.

STEP 7:

                   Be careful while dipping the Bread Slice in to the Water because, if you dip the entire Slice at the time of deep fry it may absorb lot of Oil. So, dip only one side of the each Slice and squeeze out the excess Water.

STEP 8:

              Now, after preparing all of them in the similar way, Place a deep frying pan and pour Oil to deep fry and when the Oil is moderately hot and drop these Rolls in to it and fry them and please remember that the should not be smoking. Fry them all around to golden brown color and after that place them in the tissue so that excess Oil will be absorbed.

                       Yummy Yummy Bread potato Rolls will be ready to serve and serve them the Tomato Ketchup So that Kids really enjoy this snack...
